Ingredients
 

For the Salad:

  • 10 ounces fresh mixed salad greens
  • 2 medium fresh Honeycrisp apples cored and thinly sliced
  • ¼ cup dried cranberries
  • ¼ cup chopped pecans
  • cup crumbled feta cheese
  • ¼ cup red onion thinly sliced

For the Apple Cider Dressing:

Instructions
 

  • Place the mixed greens in a large salad bowl.
  • Add the sliced apples, dried cranberries, pecans, feta cheese, and red onion.
  • Add the apple cider vinegar, olive oil, maple syrup, Dijon mustard, salt, and black pepper to a small bowl. Whisk the dressing until well blended.
  • Drizzle the dressing over the salad just before serving.
  • Gently toss until evenly coated.

Tips and Tricks

Keep the apples fresh – Slice the apples close to serving time. If preparing them earlier, toss them with a small amount of lemon juice to slow browning.
