Instructions
- Preheat the oven to 425°F and line a large baking sheet with parchment paper.
- Add the sweet potatoes, 2 teaspoons olive oil, garlic powder, salt, and black pepper to a large mixing bowl. Toss to coat, then spread the sweet potatoes in a single layer on the prepared baking sheet.
- Roast for 25 to 30 minutes, stirring halfway through, until tender and lightly browned.
- Add the chicken, curry powder, garlic powder, ginger, salt, and black pepper to a large bowl. Toss until the chicken is evenly coated.
- Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6 to 8 minutes, stirring occasionally, until browned and the internal temperature reaches 165°F.
