- ½ cup red bell pepper finely diced
- ½ cup green bell pepper finely diced
- ⅓ cup yellow onion finely diced
- ¼ cup corn kernels
- 8 large eggs
- 1 cup low-fat cottage cheese
- ½ cup shredded reduced-fat Mexican blend cheese
- 1 teaspoon chili powder

Instructions
