Weight Watchers Friendly
Chipotle Cheddar Egg Bites are a nice change when regular scrambled eggs are getting a little boring. You still have that familiar cheesy egg breakfast, but with smoky chipotle flavor and a little heat.
The chipotle peppers are where most of the heat comes from. One tablespoon gives the egg bites some kick without going overboard, although you can easily use less.
Sharp cheddar is a good choice here because you can actually taste it alongside the chipotle.
You’ll need a standard muffin pan to make 12 egg bites, enough for six servings. Just mix everything in a large bowl, divide it into the muffin cups, and bake. Nothing fancy.
These are also handy when mornings are rushed. You can make a batch ahead of time, refrigerate the leftovers, and reheat a couple whenever you need breakfast.
Two egg bites have about 16 grams of protein, so they’re a good option when you want something more substantial than toast alone.

Why You’ll Love This Chipotle Cheddar Egg Bites Recipe
Smoky Chipotle Kick
These aren’t your usual plain egg bites. The chipotle peppers and smoked paprika give them a noticeable smoky flavor with a little spice. Use less chipotle if you prefer a milder breakfast.
Cheesy Without Being Heavy
You get sharp cheddar flavor in every bite, and the cottage cheese blends into the eggs as they bake. No need to add cream or a lot of extra cheese.
Breakfast for Several Days
One batch makes 12 egg bites. Keep a few in the refrigerator for the next couple of mornings and freeze the rest if you won’t finish them soon.
Ready in About 30 Minutes
Ten minutes of prep and a little over 20 minutes in the oven. That’s pretty manageable, even when you’ve got other things to do.

Ingredient Substitutions
Chipotle Peppers in Adobo Sauce
Use 1 to 2 teaspoons for a milder batch. If you don’t have chipotle peppers, try a little smoked paprika and a pinch of cayenne pepper. The flavor won’t be quite the same, but you’ll still get some smoky heat.
Reduced-Fat Sharp Cheddar
Regular sharp cheddar works fine. You can also use pepper jack if you want a little more spice.
Low-Fat Cottage Cheese
Full-fat cottage cheese works just as well. The egg bites may be slightly richer.
Low-Fat Milk
Unsweetened almond milk or regular whole milk can be used instead. Both will work, although the texture and nutrition will vary slightly.

Notes
Tips and Tricks
Control the heat – Chipotle peppers can be pretty spicy. Start with less if you’re unsure, especially if you’re making these for someone who prefers mild food. Chop the peppers finely – Small pieces distribute the chipotle flavor more evenly, so you won’t bite into a large piece of pepper. Prevent sticking – Grease the muffin cups thoroughly, including the sides. Egg bites can stick even to nonstick pans. Expect a little shrinking – The egg bites will puff up in the oven and settle as they cool. That’s normal. Keep the texture tender – Avoid baking longer than necessary. The centers should be set, but overbaking can make the eggs rubbery.Storing and Reheating
Refrigerator – Let the egg bites cool completely. Store in an airtight container in the refrigerator for up to 4 days. Freezer – Freeze cooled egg bites in a single layer, then transfer them to a freezer-safe container or bag. Freeze for up to 2 months for best quality. Microwave – Place refrigerated egg bites on a microwave-safe plate and heat for 20 to 30 seconds. Continue heating in short intervals until warmed through. From Frozen – Thaw overnight in the refrigerator, or microwave from frozen in 30-second intervals until heated through. Reheat to 165°F.Nutrition
