Turkey and Brie Egg Bites are a nice change when cheddar and bacon have been getting all the breakfast attention.
Brie makes these a little different, but they’re still easy, familiar egg bites you can prep ahead and keep in the refrigerator.
You’ll need a standard muffin pan for 12 egg bites, and everything else gets mixed in one bowl before baking. Easy enough.
The turkey makes these a high protein breakfast with 23 grams of protein in a two-bite serving.
Spinach and green onions add a little freshness, and there’s just enough thyme to go with the turkey and Brie without taking over.
These are also handy for meal prep. Make a batch, refrigerate the extras, and breakfast is already waiting for the next few mornings.

Why You’ll Love This Turkey and Brie Egg Bites Recipe
23 Grams of Protein Per Serving
Two egg bites give you 23 grams of protein. That makes breakfast pretty easy on mornings when you need something substantial without cooking from scratch.
Brie Changes Things Up
Brie isn’t the usual egg bite cheese, and that’s exactly why it’s good here. You’ll find little creamy pockets of cheese throughout instead of the same shredded-cheese texture in every bite.
Made for Busy Mornings
Bake 12 at once and you have six servings ready to go. Keep them refrigerated and warm up a couple when you need them.
No Blender Needed
Some cottage cheese egg bites call for blending everything first. Not these. A bowl and wire whisk are all you need for the egg mixture.

Ingredient Substitutions
Turkey Breast
Cooked chicken breast works if that’s what you have available. Keep it finely chopped so it distributes well among the muffin cups.
Brie
Camembert is the closest swap. For something easier to find and a bit less creamy, try shredded mozzarella or Swiss cheese.
Baby Spinach
Finely chopped kale can replace the spinach. Remove any tough stems first.
Green Onions
Chives are an easy substitute and have a mild onion flavor that won’t overpower the Brie.

Notes
Tips and Tricks
Dice the Brie small – Small pieces are easier to divide among all 12 muffin cups and give you cheese throughout the batch. Chop the fillings finely – Large pieces of turkey or spinach can make the egg bites harder to remove cleanly from the pan. Watch the last few minutes – Pull the egg bites from the oven once the centers are set. Overbaking can make eggs rubbery.Storing and Reheating
Refrigerator – Store cooled egg bites in an airtight container in the refrigerator for up to 4 days. Freezer – Freeze cooled egg bites in a freezer-safe container or bag for up to 2 months. Thaw overnight in the refrigerator before reheating for the best texture. Microwave – Reheat refrigerated egg bites in short intervals until warmed through. Avoid overheating, since eggs can become tough quickly.Nutrition
