Bacon Cheeseburger Sweet Potato Bowl is a fun change from a regular burger dinner, especially if you love bacon cheeseburgers with plenty of pickles and sauce.

You still get that familiar combination of seasoned beef, smoky bacon, cheddar cheese, and tangy burger sauce, but instead of a bun, everything goes over roasted sweet potatoes.

The sweet potatoes are a nice change here. They’re slightly sweet with browned edges, which tastes surprisingly good with the salty bacon and seasoned ground beef.

Add some chopped dill pickles and red onion, and you have plenty of that classic cheeseburger taste in every bowl.

You can roast the sweet potatoes on a baking sheet and cook the beef in a large skillet at the same time. That keeps the cooking time around 30 minutes, even with the different components.

The homemade burger sauce is worth mentioning, too. It’s made with Greek yogurt rather than mayonnaise, so you still have a creamy topping with that familiar ketchup, mustard, and pickle flavor.

Drizzle it over everything just before serving, and add as many extra pickles as you like.

Why You’ll Love This Bacon Cheeseburger Sweet Potato Bowl

All the Good Stuff from a Bacon Cheeseburger

You don’t have to give up the bacon, cheddar, pickles, or burger sauce. They’re all here, just served over sweet potatoes instead of tucked inside a bun. The combination is familiar enough for anyone who enjoys a classic cheeseburger.

A Little Sweetness with the Savory Beef

Roasted sweet potatoes have a natural sweetness that goes nicely with salty bacon and the smoky seasoning in the beef. The browned edges are especially good once you add the burger sauce.

34 Grams of Protein Per Serving

Each bowl provides approximately 34 grams of protein. Between the beef, bacon, cheese, and Greek yogurt sauce, you have a substantial main dish without needing a separate protein on the side.

Easy to Adjust at the Table

Not everyone likes the same amount of mustard, pickles, or raw onion on a burger. You can serve the toppings separately and let everyone finish their bowl however they prefer. Extra pickles are especially good with the creamy sauce.

The Burger Sauce Is Simple to Make

You only need a small mixing bowl and a few common condiments. The sauce has a familiar cheeseburger flavor, and you can make it ahead of time if you’re preparing dinner in stages.

Notes

Tips and Tricks

Use Crisp Bacon – Cook the bacon until crisp before chopping it. Softer bacon can become chewy when mixed with the warm ground beef.
Don’t Crowd the Baking Sheet – Leave a little space between the sweet potato cubes so they can brown instead of steaming. Use two baking sheets if necessary.
Make the Sauce Ahead – Prepare the burger sauce up to 2 days in advance and refrigerate it in a covered container. Stir before serving.
Warm the Cheese – If you prefer melted cheddar, sprinkle it over the hot beef before adding the cold toppings and burger sauce.
Keep the Pickles Crunchy – Add the chopped pickles just before serving. This is especially helpful if you’re preparing the bowls ahead of time.

Storing and Reheating

Refrigerating – Store the cooked sweet potatoes and beef mixture in airtight containers in the refrigerator for up to 3 to 4 days. Keep the burger sauce, tomatoes, pickles, and red onion in separate containers.
Freezing – Freeze the cooked beef mixture and roasted sweet potatoes in separate freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator. Prepare the sauce and fresh toppings when you’re ready to serve.
Reheating – Reheat the beef and sweet potatoes in the microwave in 30 to 60-second intervals until thoroughly heated to 165°F. You can also warm the sweet potatoes in a 375°F oven until hot. Add the cheese, cold toppings, and burger sauce after reheating.
