- 1 pound boneless skinless chicken breasts cut into ½-inch pieces
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon salt

For the Dressing:
- ½ cup plain nonfat greek yogurt
- 2 tablespoon light Mayonnaise
- 1 tablespoon fresh lemon juice
- 1 teaspoon dijon mustard
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
For the Lettuce Wraps:
- 12 large butter lettuce leaves
- 4 slices bacon cooked and crumbled
- 2 large hard-boiled eggs chopped
- 1 cup cherry tomatoes quartered
- 1 medium avocado diced
- ⅓ cup reduced-fat blue cheese crumbles
- ¼ cup red onion finely chopped
- 2 tablespoon chopped fresh chives
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken, garlic powder, smoked paprika, salt, and black pepper.
- Cook for 8 to 10 minutes, stirring occasionally, until the chicken is browned and reaches an internal temperature of 165°F.
- Remove the skillet from the heat and let the chicken cool for 5 minutes.
- Add the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and black pepper to a small bowl. Whisk until smooth.
- Divide the chicken, bacon, eggs, tomatoes, avocado, blue cheese, and red onion among the lettuce leaves.
- Drizzle with the dressing and sprinkle with chives. Serve immediately.
