- 1 green bell pepper
- 1 large red onion
- 2 cups low sodium beef broth
- 1 cup long-grain white rice
- 1 pound extra lean ground beef
- ¾ cup frozen corn kernels
- ½ cup water
- 1 packet (1¼ ounce) taco seasoning
- 1½ cup fresh fat-free salsa
Instructions
- Chop the red onion and green bell pepper finely.
- In a medium saucepan, bring beef broth to a boil. Add the rice, cover, and cook until tender.
- In a large nonstick skillet, cook ground beef for 3 minutes.
