Ingredients
 

  • 8 ounces whole wheat rotini pasta
  • 2 large apples chopped
  • ¾ cup celery chopped
  • cup red onion finely chopped
  • ½ cup dried cranberries roughly chopped
  • ½ cup chopped pecans
  • cup reduced-fat feta cheese crumbled
  • 2 tablespoon chopped fresh parsley

For the Creamy Apple Cider Dressing:

  • Cook the pasta according to the package directions.
  • Drain the pasta in a colander. Rinse the pasta under cold water. Drain well.
  • Add the cooled pasta, apples, celery, red onion, dried cranberries, pecans, feta cheese, and parsley to a large mixing bowl.
  • In a small mixing bowl, add the Greek yogurt, light mayonnaise, apple cider vinegar, honey, Dijon mustard, garlic powder, onion powder, salt, and black pepper.
