Weight Watchers Friendly
Healthy Grilled Cabbage Steaks with Fresh Lemon are a fresh, easy side dish for nights when you want something lighter next to your main meal.
You only need a head of green cabbage, olive oil, melted butter, lemon juice, lemon zest, garlic powder, salt, and pepper.
The cabbage gets tender in the middle while the edges pick up a little char from the grill. The lemon keeps it bright, and the butter gives it enough richness without making it heavy.
It goes well with grilled chicken, fish, burgers, steak, or any summer dinner plate that needs a vegetable on the side.
This recipe is also helpful when you want healthy side dishes that don’t feel boring. A grill or grill pan works well for this recipe, and a pastry brush helps spread the lemon butter mixture over the cabbage slices.
Keep this one around for cookouts, weeknight meals, or anytime cabbage is hanging out in the fridge and needs a job.

Ingredient Substitutions
Green Cabbage
Savoy cabbage can be used, but it may cook a little faster because the leaves are more tender.
Olive Oil
Avocado oil can be used in place of olive oil.
Melted Butter
Use all olive oil instead of butter if you want to skip the butter.
Fresh Lemon Juice
Bottled lemon juice can work in a pinch, but fresh lemon gives a brighter taste.
Garlic Powder
Use onion powder, Italian seasoning, or a small pinch of smoked paprika for a different seasoning style.
Fresh Lemon Slices
Leave them off if you only have lemon juice and zest. The recipe will still work.

Equipment
Ingredients
- 1 head green cabbage
- 2 tablespoon olive oil
- 1 tablespoon melted butter
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon garlic powder
- 4 slices fresh lemon
Instructions
- Preheat a grill or grill pan to medium heat.
- Remove any damaged outer leaves from the cabbage. Cut the cabbage into 4 thick rounds, about ¾ to 1 inch thick, keeping the core attached so the slices hold together.
- In a small bowl, mix olive oil, melted butter, lemon juice, lemon zest, salt, black pepper, and garlic powder.
- Brush both sides of the cabbage slices with the lemon mixture.
- Place the cabbage steaks on the grill. Cook for 6 to 8 minutes on the first side, until grill marks form and the edges start to soften.
- Carefully turn the cabbage. Place 1 lemon slice on each cabbage steak and cook 6 to 8 minutes more, until the cabbage is tender with some charred edges.
- Transfer to plates. Spoon any remaining lemon butter mixture over the top before serving.
Notes
Tips and Tricks
Keep the core attached – The core helps the cabbage rounds stay together on the grill. Watch the heat – Medium heat helps the cabbage soften without burning too fast. Choose a firm cabbage head – A firm head is easier to slice into steaks and holds its shape better. Cut even slices – Similar thickness helps the cabbage steaks cook at the same pace.Storing and Reheating
Store in Refrigerator – Place leftover cabbage steaks in an airtight container. Refrigerate for up to 3 days. Reheat on Grill Pan – Place the cabbage steaks on a grill pan over medium-low heat. Warm for 2 to 4 minutes per side. Reheat in Oven – Place the cabbage steaks on a baking sheet. Warm at 350°F until heated through. Reheat in Microwave – Place one serving on a microwave-safe plate. Heat in short intervals until warm.Nutrition
