- 1 cup sweet potatoes peeled and cut into ¼-inch cubes
- ½ cup red bell pepper finely diced
- ¼ cup yellow onion finely diced

- 8 large eggs
- 1 cup low-fat cottage cheese
- ¼ cup low-fat milk
- ½ teaspoon garlic powder
