- 1 tablespoon olive oil
- 1 pound 93% lean ground beef
- 1 small yellow onion diced
- 2 cloves garlic minced
- 2 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon water
For the Lettuce Wraps:
- 8 large butter lettuce leaves
- 1 cup diced tomatoes
- ½ cup shredded reduced-fat Mexican-blend cheese
- ½ cup plain nonfat greek yogurt
- ¼ cup red onion finely diced
- ¼ cup chopped fresh cilantro
- 1 lime cut into wedges
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the ground beef and yellow onion. Cook for 6 to 8 minutes, breaking the beef apart with a wooden spoon, until the beef is browned and fully cooked.
- Drain any excess grease from the skillet.
- Add the garlic, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Cook for 30 seconds, stirring constantly.
- Add the water and stir well.
- Reduce the heat to low. Simmer for 3 to 4 minutes, until most of the liquid has evaporated.
- Place 2 lettuce leaves on each serving plate. Divide the beef mixture evenly among the lettuce leaves.
- Top with the tomatoes, cheese, Greek yogurt, red onion, and cilantro. Serve with the lime wedges.
