- 1 tablespoon olive oil divided
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt divided
- ¼ teaspoon ground black pepper
- 8 large eggs
- 1 cup liquid egg whites
- 1 cup low-fat cottage cheese
- 4 cups fresh baby spinach
- 1 cup cherry tomatoes halved
- 1 medium avocado sliced
- 2 tablespoon sliced green onions
Instructions
- Preheat the oven to 425°F.
- Line a large baking sheet with parchment paper.
- Place the sweet potatoes on the prepared baking sheet. Drizzle the sweet potatoes with 2 teaspoons olive oil, then add the smoked paprika, garlic powder, onion powder, ¼ teaspoon salt, and black pepper.
