For the Hot Honey Drizzle:

  • Preheat the oven to 425°F.
  • Line a large baking sheet with parchment paper.
  • Place the sweet potato cubes on the prepared baking sheet. Drizzle the sweet potatoes with 2 teaspoons olive oil.
  • Add ½ teaspoon smoked paprika, ½ teaspoon garlic powder, onion powder, ¼ teaspoon salt, and black pepper.
  • Toss the sweet potatoes until evenly coated with the oil and seasonings.
  • Roast for 22 to 25 minutes, stirring halfway through, until the sweet potatoes are tender and lightly browned.
  • Heat the remaining 1 teaspoon olive oil in a large skillet over medium-high heat.
  • Add the ground beef. Cook for 6 to 8 minutes, breaking the beef apart with a wooden spoon, until browned and cooked through.
  • Add the remaining ½ teaspoon smoked paprika, remaining ½ teaspoon garlic powder, chili powder, cumin, and remaining ¼ teaspoon salt. Stir the seasonings into the beef. Cook for 1 minute.
  • In a small mixing bowl, add the honey, hot sauce, lime juice, and crushed red pepper flakes, if using. Stir until well blended.
  • Divide the baby spinach between 4 bowls.
  • Add the roasted sweet potatoes, seasoned ground beef, corn, cherry tomatoes, and avocado to each bowl.
  • Drizzle each serving with the hot honey sauce.
  • Sprinkle the chopped green onions over the bowls.
