Apple Walnut and Brie Lettuce Wraps are a quick 15-minute lunch with plenty going on without much work.

Crisp Honeycrisp apple, creamy brie, walnuts, and dried cranberries make these feel a little more interesting than the usual lettuce wrap.

The Honey Dijon dressing has just enough sweetness and tang to work with both the apple and brie.

Nothing needs to be cooked, so this is especially handy for a quick fall lunch, light meal, or something different for lunch at home.

Each serving is two lettuce wraps. They’re best assembled shortly before serving so the lettuce stays fresh and crisp.

Ingredient Substitutions

Apple

Honeycrisp works well because it stays crisp after slicing. Fuji, Pink Lady, or Gala can also be used.

Brie

Camembert is the closest substitute. Goat cheese can also work, although the flavor will be tangier.

Walnuts

Use chopped pecans in place of the walnuts.

Dried Cranberries

Chopped dried cherries are a good substitute.

Greek Yogurt

Plain low-fat Greek yogurt can be used instead of nonfat.
