- 3 pounds sweet potatoes peeled and cut into ½-inch slices
- 3 medium apples peeled, cored, and thinly sliced
- 2 tablespoon unsalted butter melted
- 3 tablespoon pure maple syrup
- 2 tablespoon packed brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- ½ cup apple cider
- 1 teaspoon vanilla extract
- ½ cup chopped pecans
Instructions
- Preheat the oven to 375°F. Coat a 9×13-inch baking dish with nonstick cooking spray
- Place the sweet potatoes in a large pot and cover with water. Bring to a boil over medium-high heat, then cook for 5 minutes. Drain well.
