- 12 ounces rotini pasta
- 1 medium fresh Honeycrisp apples diced
- ¾ cup dried cranberries
- ½ cup toasted pecans chopped
- ½ cup celery finely chopped
- ⅓ cup onion finely chopped
- 2 tablespoon chopped fresh parsley
For the Cider Dressing:
- ⅓ cup plain nonfat greek yogurt
- ¼ cup light Mayonnaise
- 2 tablespoon apple cider vinegar
- 1 tablespoon pure maple syrup
- 2 teaspoon dijon mustard
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Bring a large pot of salted water to a boil.
- Add the rotini and cook according to the package directions until al dente.
- Drain the pasta in a colander. Rinse the pasta under cold water until cooled. Set the pasta aside and allow it to drain well.
- In a small mixing bowl, add the Greek yogurt, light mayonnaise, apple cider vinegar, maple syrup, Dijon mustard, salt, and black pepper. Using a wire whisk, mix until smooth.
