High Protein / Weight Watchers Friendly
Egg White Turkey Bacon Bites are a great high protein breakfast option without making a full breakfast every morning.
Two bites have 23 grams of protein, and they’re easy to portion out for meal prep.
Turkey bacon and sharp cheddar give these a savory, familiar breakfast flavor. Green onions add a little freshness without taking over. And yes, there’s cottage cheese in there, but it blends right into the egg mixture.
These take about 37 minutes from start to finish, so they’re pretty manageable even if breakfast prep isn’t normally happening on a weekday.
Make the full dozen, stash the extras in the refrigerator, and breakfast is handled for a few days.

Ingredient Substitutions
Turkey Bacon
Cooked lean turkey sausage can be used instead. Crumble it into small pieces before adding it to the egg mixture.
Reduced-Fat Cheddar
Reduced-fat Monterey Jack, Colby Jack, or a mild Mexican cheese blend can replace the cheddar.
Green Onions
Finely chopped chives work well if green onions aren’t available.
Low-Fat Cottage Cheese
Fat-free cottage cheese can be used, although the finished egg bites may be slightly less rich.

Tips and Tricks
Chop the bacon small – Smaller pieces distribute more evenly through all 12 egg bites. Use liquid egg whites – They’re much easier here than separating enough whole eggs to make 2½ cups. Let them rest briefly – Five minutes in the muffin pan makes the egg bites easier to remove.Storing and Reheating
Refrigerator – Store cooled egg bites in an airtight container in the refrigerator for up to 4 days. Freezer – Freeze cooled egg bites in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating. Microwave – Reheat refrigerated egg bites in the microwave until warmed through. Start with about 30 seconds and add more time as needed.Nutrition
