Ingredient Substitutions

Ground Beef

Use 93% lean ground beef if that is what you have. It will add a little more fat but works the same way.

Butter Lettuce

Romaine leaves can replace butter lettuce. Choose larger outer leaves that can hold the beef and toppings.

Reduced-Fat Cheddar

Regular shredded cheddar can be used in the same amount.

Light Mayonnaise

  • 12 large butter lettuce leaves
  • 1 cup shredded iceberg lettuce
  • ½ cup reduced-fat shredded cheddar cheese
  • ½ cup chopped dill pickles
  • ¼ cup yellow onion finely diced
  • 1 teaspoon sesame seeds

Instructions
 

  • Add the mayonnaise, chopped pickles, ketchup, mustard, vinegar, garlic powder, onion powder, and paprika to a small bowl. Whisk until well blended.
  • Heat a large skillet over medium heat.
  • Add the ground beef and ½ cup diced onion. Cook for 7 to 9 minutes, breaking the beef apart as it cooks, until browned and the onion is tender.
  • Drain any excess grease from the skillet.
  • Add the garlic powder, onion powder, salt, and black pepper. Stir until evenly mixed.
  • Arrange 3 butter lettuce leaves on each plate.
  • Divide the shredded iceberg lettuce among the butter lettuce leaves.
  • Spoon the cooked beef over the lettuce.
  • Top with the cheddar cheese, chopped pickles, and remaining diced onion.
  • Drizzle with the special sauce. Sprinkle with sesame seeds and serve immediately.
