Lettuce Wraps:
- 8 large butter lettuce leaves
- ¼ cup red onion finely diced
- 1 small jalapeno peppers seeded and finely diced (optional)
- 1 lime cut into wedges
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken, chili powder, cumin, garlic powder, salt, and black pepper, and cook for 6 to 8 minutes, stirring occasionally, until browned and the chicken reaches 165°F.
- Transfer the chicken to a plate.
- Add the corn to the same skillet and cook for 4 to 5 minutes, stirring occasionally, until lightly browned.
- Add the Greek yogurt, mayonnaise, lime juice, chili powder, and garlic powder to a small bowl and whisk until smooth.
- Add the cooked corn, cotija cheese, and cilantro to the yogurt mixture and stir until evenly coated.
- Divide the chicken evenly among the lettuce leaves. Spoon the street corn mixture over the chicken. Top with the red onion and jalapeño.
- Serve with the lime wedges.
