Weight Watchers Mexican Street Corn - Elote

Ingredients you will need:

  • 4 medium corn on the cob husked, silk removed
  • 4 spray nonstick cooking spray
  • ¼ cup light Mayonnaise
  • ¼ cup fresh cilantro chopped
  • 2 tbsp fat-free Greek yogurt
  • ½ tsp lime zest finely grated
  • 1 tsp fresh lime juice
  • ½ tsp ancho chili powder
  • ¼ tsp minced garlic
  • 4 tbsp feta cheese crumbled

How to make:

  1. Preheat the grill to medium heat
  2. Spray the corn lightly with cooking spray.
  3. On preheated grill, grill the corn until tender and a little charred. approx 12 minutes, turn corn occasionally.
  4. In the meantime, in a bowl, add mayonnaise, yogurt, lime juice, lime zest, garlic, chili powder, and cilantro. Stir to mix well.
  5. Using a basting brush, coat the grilled corn with the mayonnaise mixture, then sprinkle each ear of corn with 1 tablespoon of cheese, and sprinkle with a little more ancho chili powder.
  6. Serve with a wedge of lime.
