Weight Watchers Mexican Street Corn – Elote
Ingredients
- 4 medium corn on the cob husked, silk removed
- 4 spray nonstick cooking spray
- ¼ cup light Mayonnaise
- ¼ cup fresh cilantro chopped
- 2 tbsp fat-free Greek yogurt
- ½ tsp lime zest finely grated
- 1 tsp fresh lime juice
- ½ tsp ancho chili powder
- ¼ tsp minced garlic
- 4 tbsp feta cheese crumbled
Instructions
- Preheat the grill to medium heat
- Spray the corn lightly with cooking spray.
- On preheated grill, grill the corn until tender and a little charred. approx 12 minutes, turn corn occasionally.
- In the meantime, in a bowl, add mayonnaise, yogurt, lime juice, lime zest, garlic, chili powder, and cilantro. Stir to mix well.
- Using a basting brush, coat the grilled corn with the mayonnaise mixture, then sprinkle each ear of corn with 1 tablespoon of cheese, and sprinkle with a little more ancho chili powder.
- Serve with a wedge of lime.
