Roasted Sweet Potato Chicken Lettuce Wraps give you a hearty filling without turning lettuce wraps into a heavy meal.

The roasted sweet potatoes make a nice change from the usual rice or beans, and they’re cut small enough to stay neatly inside the lettuce.

The chicken has a smoky, lightly spiced seasoning with cumin, chili powder, and paprika. Nothing overly hot. A quick yogurt lime sauce goes over the top, then diced bell pepper, red onion, and cilantro add some crunch.

Each serving has 41 grams of protein, so these make sense when a high protein dinner is the goal. They’re ready in about 40 minutes, and most of that time is spent waiting for the sweet potatoes to roast.

You will need a baking sheet for the sweet potatoes, and a large skillet for the chicken. Keep the lettuce leaves fairly large so they can hold everything without tearing.

Ingredient Substitutions

Butter Lettuce

Romaine hearts can be used if butter lettuce isn’t available. Choose the larger inner leaves that can hold the filling.

Chicken Breast

Boneless skinless chicken thighs can replace the chicken breast. Cooking time may vary slightly, so cook to an internal temperature of 165°F.

Greek Yogurt

Plain low-fat Greek yogurt can replace nonfat Greek yogurt without changing the preparation.

Cilantro

Leave it out if cilantro isn’t preferred. Sliced green onions are another good option.

Ingredients
 

For the Roasted Sweet Potatoes:

For the Yogurt Lime Sauce:

  • ½ cup plain nonfat greek yogurt
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • ¼ teaspoon garlic powder
  • teaspoon salt

For the Lettuce Wraps:

  • 8 large butter lettuce leaves
  • ½ cup red bell pepper finely diced
  • ¼ cup red onion finely diced
  • 2 tablespoon chopped fresh cilantro

Instructions
 

  • Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  • Add the sweet potatoes, 2 teaspoons olive oil, smoked paprika, garlic powder, salt, and black pepper to a large mixing bowl.
  • Toss until the sweet potatoes are coated.
  • Spread the sweet potatoes in a single layer on the prepared baking sheet.
  • Roast for 20 to 25 minutes, or until tender and lightly browned, stirring halfway through.
  • Add the chicken, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper to a large mixing bowl. Toss until the chicken is coated.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  • Add the chicken. Cook for 7 to 9 minutes, stirring occasionally, until browned and the internal temperature reaches 165°F.
  • Add the Greek yogurt, lime juice, honey, garlic powder, and salt to a small bowl. Whisk until smooth.
  • Divide the chicken among the lettuce leaves. Add the roasted sweet potatoes, red bell pepper, and red onion.
  • Drizzle the yogurt lime sauce over the wraps. Sprinkle with cilantro.
