Ingredients
- nonstick cooking spray
- 1 pound boneless skinless chicken breast four 4-oz pieces
- salt to taste
- cayenne pepper to taste
- ⅓ cup all-purpose flour
- 3 fluid ounces 1% low-fat buttermilk
- ½ cup cornflakes crumbs
Instructions
- Preheat the oven to 375°F.
- Lightly coat a baking dish with cooking spray and set it aside.
- Season the chicken breasts on both sides with salt and cayenne pepper. Set aside.
- In a medium bowl, combine the flour, ¼ teaspoon salt, and ⅛ teaspoon cayenne pepper. Stir to mix.
- Pour the buttermilk into one shallow dish.
- Pour the cornflake crumbs into a second shallow dish.
- Take one piece of chicken and coat both sides in the flour mixture.
- Dip the floured chicken into the buttermilk, turning to coat both sides.

Heat on a baking sheet at 375°F for 10 to 12 minutes until warmed through and crispy. Reheat in the Air Fryer
Heat at 375°F for 5 to 6 minutes. This method keeps the crust the crispiest. Reheat in the Microwave (Not recommended)
Heat in 30-second intervals until warmed through. The coating will soften.
