Turkey Pepperoni Grinder Chopped Salad takes everything you want from an Italian grinder and chops it into a scoopable meal.
You get turkey pepperoni, provolone, romaine, tomatoes, cucumber, banana peppers, red onion, and black olives in nearly every bite.
The creamy Italian grinder dressing uses Greek yogurt, light mayonnaise, red wine vinegar, Dijon mustard, and banana pepper juice.
It coats the small pieces without turning the salad into a heavy bowl of dressing.
Serve the chopped salad with homemade garlic pita chips and use them to scoop it up. The chips add crunch and make this feel more fun than a standard lunch salad.
This high protein salad has 26 grams of protein per serving and a total time of 28 minutes, it also great for busy weekday lunches and dinners.
A sharp knife and cutting board help you chop the salad into small, even pieces.
You’ll also need a baking sheet for the pita chips and two mixing bowls for the salad and dressing.

Crisp and Creamy
Fresh vegetables and toasted pita chips balance the creamy grinder dressing.

Ingredient Substitutions
Turkey Pepperoni
Use chopped turkey salami or regular pepperoni. Regular pepperoni will add more fat and may make the salad saltier.
Provolone Cheese
Replace the provolone with mozzarella, reduced-fat mozzarella, or Monterey Jack.
Whole Wheat Pita
Use regular pita bread or whole wheat flatbread. Cut it into pieces before baking.
Greek Yogurt
Use low-fat plain Greek yogurt. The dressing may be slightly richer.
Banana Pepper Juice
Use another tablespoon of red wine vinegar if banana pepper juice is unavailable. The dressing will taste sharper.
Romaine Lettuce
Use iceberg lettuce or a mixture of romaine and iceberg for a similar crunch.
