- 1 medium yellow onion diced
- 2 medium carrots peeled and sliced
- 2 stalks celery diced

- 5 cups low-sodium chicken broth
- 2 medium sweet potatoes peeled and cut into ½-inch cubes
- 1 can (15-ounce) cannellini beans drained and rinsed
- 2 cups chopped kale
- 1 tablespoon fresh lemon juice
- 2 tablespoon chopped fresh parsley
Instructions
- Heat the olive oil in a large Dutch oven over medium heat.
- Add the chicken. Cook for 5 to 6 minutes, stirring occasionally, until lightly browned.
- Add the onion, carrots, and celery. Cook for 5 minutes, stirring occasionally.
- Add the garlic, thyme, smoked paprika, oregano, salt, and black pepper. Cook for 30 seconds.
- Add the chicken broth, sweet potatoes, and cannellini beans. Stir well.
- Bring the soup to a boil. Reduce the heat to low. Cover and simmer for 18 to 20 minutes, until the sweet potatoes are tender and the chicken is cooked through.
- Add the kale. Simmer for 3 to 4 minutes, until the kale wilts.
- Add the lemon juice and parsley. Stir well.
