- 1 pound boneless skinless chicken breast cut into small bite-size pieces
- ½ teaspoon chili powder
- ½ teaspoon ground cumin

- ⅛ teaspoon ground black pepper
- ½ cup yellow onion finely diced
- ½ cup red bell pepper finely diced
- ½ cup black beans drained and rinsed

- ½ cup cooked brown rice
- ½ cup salsa
- 8 large butter lettuce leaves
