Ingredients
- 3 tomatoes sliced
- 1 cup sweet onion finely sliced
- salt to taste
- black pepper – fresh ground to taste
- 3 tbsp olive oil
- 1 tsp lemon juice
- 1 tbsp coriander leaves chopped
Instructions
- In a medium sized mixing bowl, add onion, tomatoes, salt and pepper. Mix.
- In a small mixing bowl, add lemon juice, and olive oil. Mix well.
- Pour olive oil mixture over tomatoes.
- Top with corriander leaves.
