Weight Watchers Barbecue Chicken
Equipment
Ingredients
- ½ cup ketchup
- 2 tbsp apricot jam (or peach jam)
- 2 tbsp onion finely chopped
- 1 tsp Worcestershire sauce
- 2 tbsp white vinegar
- ⅛ tsp garlic powder
- 1½ tsp chili powder
- 4 (6 oz each) bone-in skinless chicken breast
Instructions
- In a small saucepan, add ketchup, jam, onion, Worcestershire sauce, vinegar, garlic powder, and chili powder. Stir to mix well.
- Bring to a boil, reduce heat, and simmer for 5 minutes uncovered.
- Reserve ½ cup of the prepared sauce, and keep it warm for serving later, and transfer the rest to a small bowl to take to the grill.
- Prepare grill rack by spraying with Pam cooking spray. Heat grill to medium/high heat – approx 375° – 400°
- Put the chicken on the prepared grill with the bone side up. Cover and grill for 8 minutes. Turn chicken over, and grill another 8 minutes, or until chicken is fully cooked. Coat all sides with barbecue sauce.
- Serve with the previously prepared reserved ½ cup of barbecue sauce.
