Weight Watchers Vegetable Soup

Ingredients
- 1 cup carrots sliced
- 1½ celery sliced
- ½ large onion cut in half, sliced thin
- 2 cubes beef bouillion
- 3 cans nonfat beef broth (14 oz each)
- 1 tsp cajun spice
- ¼ tsp basil
- 2½ cups shredded cabbage
- 2 cloves garlic minced
- 1 can diced tomatoes (14½ oz)
- ½ cup zucchini sliced
Instructions
- Coat a large saucepan with Pam.
- In the saucepan, saute carrots, celery and onion until tender, about 5 minutes.
- Add bouillon cubes, beef broth, Cajun spice, basil, cabbage, garlic, and tomatoes in the saucepan.
- Bring to a boil; reduce heat and simmer about 30 minutes.
- Add zucchini, simmer another 10 minutes.
