Ingredients
 

  • 32 tortilla chips
  • 8 ounces 96% lean ground beef
  • ¾ teaspoon dried oregano
  • salt to taste
  • ¾ cup fire-roasted diced tomatoes
  • cup refried black beans
  • ½ cup shredded reduced-fat Mexican cheese blend
  • 1 medium tomato finely chopped
  • 4 large scallions finely chopped
  • 2 medium fresh jalapeno pepper finely chopped

Instructions
 

  • Preheat the broiler to high.
  • Arrange tortilla chips in a single layer, close together, on a nonstick baking sheet.
  • Coat a large skillet with cooking spray and heat over medium.
  • Add ground beef and cook for 3 to 4 minutes, breaking it up as it cooks.
  • Season beef with oregano and salt.
  • Stir in fire-roasted tomatoes and refried beans.
  • Cook for 3 to 5 minutes, stirring occasionally, until heated through.
  • Spoon the beef mixture evenly over the chips.
  • Sprinkle shredded cheese on top.
  • Broil for 30 seconds to 1 minute until the cheese melts.
  • Remove from broiler.
  • Top with chopped fresh tomato, scallions, and jalapeños.
