Ingredients
 

  • 1 tablespoon olive oil
  • pound boneless skinless chicken breasts cut into bite-size pieces
  • 1 medium yellow onion diced
  • 2 medium carrots peeled and sliced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 5 cups low-sodium chicken broth
  • 2 medium sweet potatoes peeled and cut into ½-inch cubes
  • 1 can (15-ounce) cannellini beans drained and rinsed
  • 2 cups chopped kale
  • 1 tablespoon fresh lemon juice
  • 2 tablespoon chopped fresh parsley

Instructions
 

  • Heat the olive oil in a large Dutch oven over medium heat.
  • Add the chicken. Cook for 5 to 6 minutes, stirring occasionally, until lightly browned.
  • Add the onion, carrots, and celery. Cook for 5 minutes, stirring occasionally.
  • Add the garlic, thyme, smoked paprika, oregano, salt, and black pepper. Cook for 30 seconds.
  • Add the chicken broth, sweet potatoes, and cannellini beans. Stir well.
  • Bring the soup to a boil. Reduce the heat to low. Cover and simmer for 18 to 20 minutes, until the sweet potatoes are tender and the chicken is cooked through.
  • Add the kale. Simmer for 3 to 4 minutes, until the kale wilts.
  • Add the lemon juice and parsley. Stir well.

Cut Chicken Evenly – Keep the chicken pieces close in size so they finish cooking at the same time.
