Ingredients
 

  • nonstick cooking spray
  • 1 teaspoon olive oil
  • ½ cup red bell pepper finely diced
  • ¼ cup yellow onion finely diced
  • 8 large eggs
  • 1 cup low-fat cottage cheese
  • ¼ cup low-fat milk
  • 1 tablespoon taco seasoning
  • 1 cup cooked chicken breast finely chopped
  • ½ cup shredded reduced-fat sharp cheddar cheese
  • ¼ cup canned diced green chiles drained
  • 2 tablespoon green onions finely chopped

Instructions
 

  • Preheat the oven to 350°F. Coat a standard 12-cup muffin pan with cooking spray.
  • Heat the olive oil in a large skillet over medium heat. Add the red bell pepper and yellow onion. Cook for 5 to 7 minutes, stirring occasionally, until softened. Remove the skillet from the heat. Let the vegetables cool slightly.
  • Add the eggs, cottage cheese, milk, and taco seasoning to a large mixing bowl. Whisk until well blended. Add the cooked vegetables, chicken, cheddar cheese, green chiles, and green onions. Stir until evenly mixed.
  • Divide the egg mixture evenly between the prepared muffin cups. Bake for 20 to 22 minutes, or until the centers are set. Let the egg bites cool in the pan for 5 minutes. Run a thin knife around the edges. Remove the egg bites from the muffin pan. Serve warm.
