Apple Pecan Chicken Lettuce Wraps are a quick way to turn cooked chicken into a high protein lunch without heating anything up.

Ingredient Substitutions

Apple

Use any crisp apple. Honeycrisp, Pink Lady, Fuji, or Granny Smith all work well.

Pecans

Chopped walnuts can replace the pecans. For a nut-free version, simply leave them out.

Greek Yogurt

Ingredients
 

  • 3 cups cooked boneless skinless chicken breast diced
  • 1 medium apple cored and diced
  • ½ cup celery diced
  • cup red onion finely diced
  • cup chopped pecans
  • ½ cup plain nonfat greek yogurt
  • 2 tablespoon light Mayonnaise
  • 1 tablespoon fresh lemon juice
  • 2 teaspoon dijon mustard
  • 2 teaspoon honey
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 8 large butter lettuce leaves

Instructions
 

  • Add the chicken, apple, celery, red onion, and pecans to a large mixing bowl.
  • Add the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, honey, salt, and black pepper to a small mixing bowl. Whisk until smooth.
  • Add the dressing to the chicken mixture and stir until evenly coated.
  • Divide the chicken mixture evenly among the lettuce leaves.
  • Serve immediately.
