Apple Pecan Chicken Lettuce Wraps are a quick way to turn cooked chicken into a high protein lunch without heating anything up.
They take about 20 minutes, so there’s very little standing between the ingredients and lunch.
The filling has plenty of crunch from the apple, celery, and pecans, with just enough creamy dressing to hold everything together.
It’s fresh and crisp rather than heavy. Butter lettuce keeps the wraps light and easy to pick up, although the chicken mixture can also be packed separately if they’re being made ahead.
Each serving has 42 grams of protein, which makes these useful for a filling lunch or quick dinner.
They’re also easy to adjust. Use a sweeter or more tart apple depending on what’s on hand, and leave out the pecans if needed.

Why You’ll Love This Apple Pecan Chicken Lettuce Wraps
42 Grams of Protein Per Serving
The chicken makes these a substantial lunch without adding a lot of prep time, especially when using chicken that’s already cooked.
Ready in 20 Minutes
There’s no cooking required. Chop the ingredients, mix the dressing, and assemble the wraps.
Crisp and Creamy
Apple, celery, and pecans give the filling plenty of texture. The creamy dressing keeps it from feeling dry.
Good for Cold Lunches
The chicken mixture can be chilled and packed ahead. Keep the lettuce separate until serving so it stays crisp.

Ingredient Substitutions
Apple
Use any crisp apple. Honeycrisp, Pink Lady, Fuji, or Granny Smith all work well.
Pecans
Chopped walnuts can replace the pecans. For a nut-free version, simply leave them out.
Greek Yogurt
Plain low-fat Greek yogurt can be used instead of nonfat Greek yogurt.
Butter Lettuce
Romaine leaves or iceberg lettuce cups can be used if butter lettuce isn’t available.
Dijon Mustard
Yellow mustard can work in a pinch, but the flavor will be a little sharper and less complex.

Notes
Tips and Tricks
Dry the lettuce well – Extra water on the leaves can make the wraps slippery and watery. Keep the apple crisp – Mix the filling close to serving time for the best texture. Pack the filling separately – For meal prep, store the lettuce and chicken mixture in separate containers and assemble when ready to eat. Chop everything fairly small – Smaller pieces make the wraps easier to fill and eat.Storing
Refrigerator – Store the chicken mixture in an airtight container in the refrigerator for up to 3 days. Keep the washed and dried lettuce in a separate container. Meal prep – Portion the filling ahead of time, but wait to fill the lettuce leaves until serving so they stay crisp.Nutrition
