  • pounds boneless skinless chicken breasts cut into 1-inch pieces
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 small zucchini cut into bite-sized pieces
  • 1 red bell pepper cut into bite-sized pieces
  • 3 sliced green onions
  • ½ cup unsalted roasted cashews

For the Sauce:

  • Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
  • Place the sweet potatoes in a large mixing bowl. Add 2 teaspoons olive oil, garlic powder, salt, and black pepper, then toss to coat.
  • Spread the sweet potatoes in a single layer on the prepared baking sheet.
  • Bake for 25 to 30 minutes, turning halfway through, until tender and lightly browned.
  • Add the soy sauce, water, honey, rice vinegar, sesame oil, garlic, ginger, and cornstarch to a small bowl. Whisk until smooth.
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  • Add the chicken and season with salt and black pepper. Cook for 6 to 8 minutes, stirring occasionally, until browned and the internal temperature reaches 165°F.
  • Add the zucchini and red bell pepper. Cook for 4 to 5 minutes, stirring occasionally, until crisp-tender.
  • Reduce the heat to medium.
  • Whisk the sauce again, then pour it into the skillet. Cook for 2 to 3 minutes, stirring frequently, until thickened.
  • Add the cashews and green onions. Stir until heated through.
  • Divide the roasted sweet potatoes among 4 bowls. Spoon the cashew chicken mixture over the top.

Cut the sweet potatoes evenly – Keeping the cubes close to the same size helps them finish roasting at the same time.
Give the chicken some room – An overcrowded skillet can cause the chicken to steam instead of brown.
