Honey Strawberry Basil Popsicles are the kind of freezer treat you make when strawberries are on your mind and you want something cold without turning it into a whole project.

You’ll need frozen strawberries, honey, lemon juice, a small pinch of salt, and fresh basil. That’s it.

The strawberries give these popsicles their fruit base, the honey adds sweetness, and the lemon juice keeps everything bright.

The basil makes them feel a little more grown-up without making them weird. It’s still a strawberry popsicle, just with a fresh finish.

This recipe works well for summer desserts, afternoon snacks, pool days, and healthy desserts when you want something cold from the freezer.

Keep a popsicle mold ready and you can make a batch earlier in the day for later. They’re also a nice way to use frozen strawberries when fresh ones aren’t at their peak.

Tips and Tricks

Don’t over-blend the basil – Pulse the basil only until mixed in. This keeps small pieces of basil in the popsicles instead of turning the whole mixture green.
Leave room at the top – Fill the molds close to the top, but leave a little space for the mixture to expand as it freezes.
Run molds under warm water – Hold the outside of the mold under warm water for a few seconds if the popsicles do not release right away.
