A quick and easy, healthy dinner with boneless, skinless chicken breast, chili powder, onion, bell pepper, tomato, jalapeno peppers, and hot pepper sauce.



This spicy dinner is gluten free and low carb.

Ready in 20 minutes, it’s the perfect skillet meal.

Weight Watchers Acapulco Chicken

Ingredients you will need:

How to make:

  1. Prepare the chicken by seasoning with salt, pepper, and ½ tbsp of the chile powder.
  2. In a large skillet, add olive oil and heat over medium/high heat.
  3. Add prepared chicken and saute approx 3 or 4 minutes or until chicken is no longer pink.
  4. Transfer the chicken to a plate using a slotted spoon. Cover to keep warm for later.
  5. Using the same large skillet, add onion and bell pepper.
  6. Stir fry onion and pepper until soft.
  7. Add tomatoes, and jalapeno peppers, hot sauce, and the other ½ tablespoon of chile powder.
  8. Cook, stirring constantly for 4 minutes.
  9. Return chicken to the skillet and stir fry approx 2 minutes or until heated through.
