Weight Watchers Bacon Tomato Cups

Ingredients
- 8 slices bacon
- 1 tomato chopped
- ½ onion chopped
- 3 oz swiss cheese shredded
- ½ cup mayonnaise
- 1 tsp dried basil
- 1 can (16 oz) refrigerated buttermilk biscuit dough
Instructions
- Preheat oven to 375° F
- Heat a skillet at medium heat. Add bacon and cook until browned. Move bacon to paper towels, to soak up grease.
- In a medium sized mixing bowl, crumble bacon. Mix in Swiss cheese, onion, tomato, basil, and mayonnaise. Set aside.
- Grease lightly a mini muffin tin
- Split biscuits in half horizontally. Put each biscuit half into prepared muffin tin. Top each half with the filling.
- Bake biscuits approx 10 – 12 minutes or until golden brown.
