Ingredients
 

  • 8 slices bacon
  • 1 tomato chopped
  • ½ onion chopped
  • 3 oz swiss cheese shredded
  • ½ cup mayonnaise
  • 1 tsp dried basil
  • 1 can (16 oz) refrigerated buttermilk biscuit dough

Instructions
 

  • Preheat oven to 375° F
  • Heat a skillet at medium heat. Add bacon and cook until browned. Move bacon to paper towels, to soak up grease.
  • In a medium sized mixing bowl, crumble bacon. Mix in Swiss cheese, onion, tomato, basil, and mayonnaise. Set aside.
  • Grease lightly a mini muffin tin
  • Split biscuits in half horizontally. Put each biscuit half into prepared muffin tin. Top each half with the filling.
  • Bake biscuits approx 10 – 12 minutes or until golden brown.
