An easy tomato based seafood soup recipe.
Full of flavor and made with Rotel, potatoes, carrots, green bell pepper, celery, tomato paste, and fish stock.
You can adjust the heat by using mild, regular, or hot Rotel.
The hot is HOT!.

Makes 6 servings.
You can keep it in the refrigerator for up to 3 days, or freeze it for later.

Weight Watchers Manhattan Clam Chowder
Ingredients
- 20 oz canned clams minced, drained, juice reserved
- 1 medium carrot chopped
- 1 medium green pepper chopped
- 2 medium celery ribs chopped
- 1 can (10oz) Rotel tomatoes diced
- 1 can (3oz) tomato paste
- 2 small potatoes chopped
- 29 oz fish stock or clam juice
- 1 tsp thyme
- dash sherry wine
Instructions
- Drain liquid off of clams placing juice in a measuring cup. Add enough water to the juice to make 1½ cups.
- Mince clams.
- In a large saucepan, add clam juice/water mixture, carrot, green pepper, and celery.
- Over medium/high heat, bring to a boil.
- Reduce the heat, cover the saucepan, and simmer approx 10 minutes or until the vegetables become tender.
- Add in Rotel tomatoes with the juice, tomato paste, potatoes, fish stock (or clam juice). Stir to mix well.
- Over medium/high heat, bring to a boil.
- Reduce the heat, cover the saucepan, and simmer 10 minutes.
- Add in the clams, thyme, and sherry and stir to mix.
- Return to boil.
- Reduce the heat, and simmer 1 – 2 minutes or until heated through.
