You can adjust the heat by using mild, regular, or hot Rotel.

You can keep it in the refrigerator for up to 3 days, or freeze it for later.

  • Drain liquid off of clams placing juice in a measuring cup. Add enough water to the juice to make 1½ cups.
  • Mince clams.
  • In a large saucepan, add clam juice/water mixture, carrot, green pepper, and celery.
  • Over medium/high heat, bring to a boil.
  • Reduce the heat, cover the saucepan, and simmer approx 10 minutes or until the vegetables become tender.
  • Add in Rotel tomatoes with the juice, tomato paste, potatoes, fish stock (or clam juice). Stir to mix well.
  • Over medium/high heat, bring to a boil.
  • Reduce the heat, cover the saucepan, and simmer 10 minutes.
  • Add in the clams, thyme, and sherry and stir to mix.
  • Return to boil.
  • Reduce the heat, and simmer 1 – 2 minutes or until heated through.
