Fun but practical! The measurements are at 4 ounces, 7 ounces, and 10 ounces.
Ingredients you will need:
- ½ cup onions chopped
- 1 lb extra lean ground beef drained or rinsed
- 15 oz canned diced tomatoes
- 15 oz canned kernel corn drained
- ¼ cup canned jalapeno slices, chopped
- 15 oz canned black beans rinsed and drained
- 1¼ oz taco seasoning mix
- 8 corn tortillas
- ¾ cup sour cream – non-fat
- fresh chopped cilantro to taste
- ⅓ cup Mexican cheese blend – reduced-fat shredded
How to make:
- In a large skillet, brown onions and ground beef over medium/high heat.
- Using a colander, drain and rinse with warm water. Return to skillet.
- In the same skillet, add tomatoes, corn, jalapenos, black beans, and taco seasoning. Stir to mix well.
- Reduce heat and simmer for 5 minutes.
- Preheat oven to 350°
- Prepare a 2 Quart 12 x 8 baking dish by spraying with Pam cooking spray.
- Cut the tortillas in half, and line the prepared baking dish with 8 of the halves. They should overlap a bit.
- Place ½ of the cooked ground beef mix over the tortillas.
- Evenly spread sour cream over the ground beef.
- Place the other 8 tortilla halves on top of the sour cream.
- Top with the rest of the ground beef.
- Bake in preheated oven for 25 minutes.
- Sprinkle cheese and cilantro on top. cover and let sit for approx 5 minutes to melt cheese.
