How to make:

  • In a large skillet, brown onions and ground beef over medium/high heat.
  • Using a colander, drain and rinse with warm water. Return to skillet.
  • In the same skillet, add tomatoes, corn, jalapenos, black beans, and taco seasoning. Stir to mix well.
  • Reduce heat and simmer for 5 minutes.
  • Preheat oven to 350°
  • Prepare a 2 Quart 12 x 8 baking dish by spraying with Pam cooking spray.
  • Cut the tortillas in half, and line the prepared baking dish with 8 of the halves. They should overlap a bit.
  • Place ½ of the cooked ground beef mix over the tortillas.
  • Evenly spread sour cream over the ground beef.
  • Place the other 8 tortilla halves on top of the sour cream.
  • Top with the rest of the ground beef.
  • Bake in preheated oven for 25 minutes.
  • Sprinkle cheese and cilantro on top. cover and let sit for approx 5 minutes to melt cheese.
