- 1 pound unsweetened frozen strawberries thawed (save juice)
- 3 tablespoon honey
- 1 teaspoon lemon juice
- ⅛ teaspoon salt
- 6 fresh basil leaves torn into little bits
Instructions
- Place the thawed strawberries and saved juice, honey, lemon juice, and salt. in a large blender.
- Cover the blender. Puree until the mixture is smooth.
- Stop the blender as needed. Scrape the sides of the blender with a spatula.
- Add the basil.
- Cover the blender again. Pulse until the basil is mixed in, but not fully pureed.
- Divide the mixture evenly between 6 popsicle molds. Insert popsicle sticks.
- Freeze until solid.

Tips and Tricks
Don’t over-blend the basil – Pulse the basil only until mixed in. This keeps small pieces of basil in the popsicles instead of turning the whole mixture green. Leave room at the top – Fill the molds close to the top, but leave a little space for the mixture to expand as it freezes.
