This tasty vegetarian side dish is easy to make in the Air Fryer. made with zucchini, egg, parmesan cheese, breadcrumbs, cayenne pepper, garlic powder, and served with Marinara sauce.

Low calorie, and low carb.

How to make Weight Watchers Air Fryer Zucchini Fries:

  1. Cut across the zucchini to make 3 inch long pieces. Then cut the lengths into ½ inch slices – French Fry shaped
  2. In a large mixing bowl, add egg and beat.
  3. Add in the zucchini, toss to coat with egg.
  4. In a shallow dish, add cheese, breadcrumbs, cayenne pepper, salt, and garlic powder. Stir to mix.
  5. Take zucchini out of the egg, gently shake off excess, and place in breadcrumb mix. Turn to coat.
  6. Preheat air fryer to 400° F.
  7. Prepare air fryer basket by spraying with non-stick cooking spray.
  8. Place zucchini in the basket in a single layer with some space in between. You may need to do multiple batches.
  9. Spray zucchini with non-stick cooking spray.
  10. Air fry zucchini approx 6 – 8 minutes or until they become crisp and brown.
  11. Transfer the cooked zucchini to a plate and cover to keep them warm.
  12. Repeat with the next batch (if necessary)
  13. Serve zucchini with marinara sauce for dipping.
