Weight Watchers Air Fryer Zucchini Fries
Ingredients
- 1 large zucchini
- 1 large egg
- ¼ cup grated parmesan cheese
- ¼ cup dried breadcrumbs
- ¼ tsp cayenne pepper
- 1 pinch kosher salt
- ½ tsp garlic powder
- 4 sprays nonstick cooking spray
- ¼ cup fat-free marinara sauce
Instructions
- Cut across the zucchini to make 3 inch long pieces. Then cut the lengths into ½ inch slices – French Fry shaped
- In a large mixing bowl, add egg and beat.
- Add in the zucchini, toss to coat with egg.
- In a shallow dish, add cheese, breadcrumbs, cayenne pepper, salt, and garlic powder. Stir to mix.
- Take zucchini out of the egg, gently shake off excess, and place in breadcrumb mix. Turn to coat.
- Preheat air fryer to 400° F.
- Prepare air fryer basket by spraying with non-stick cooking spray.
- Place zucchini in the basket in a single layer with some space in between. You may need to do multiple batches.
- Spray zucchini with non-stick cooking spray.
- Air fry zucchini approx 6 – 8 minutes or until they become crisp and brown.
- Transfer the cooked zucchini to a plate and cover to keep them warm.
- Repeat with the next batch (if necessary)
- Serve zucchini with marinara sauce for dipping.
