Weight Watchers Apple Fritters
Ingredients
- 1 qt vegetable oil for frying
- 1 cup cinnamon sugar
- 1 tbsp sugar
- 1½ cups all-purpose flour
- ½ tsp salt
- 2 tsp baking powder
- 2 eggs beaten
- 1 tbsp vegetable oil
- ⅔ cup milk
- 3 apples peeled, cored and chopped
Instructions
- Add oil in a deep-fryer (or electric skillet)
- Heat to 375° F
- In a medium mixing bowl, add cinnamon. Set aside for later.
- Using a large bowl, add sugar, flour, salt, and baking powder. Stir to mix.
- Stir in eggs, oil, and milk. Mix well.
- Add in the apples and stir to mix evenly.
- Drop batter by spoonfuls into the deep fryer and cook approx 5 minutes or until golden brown. Don't overfill the deep fryer. the fritters should have room to cook on all sides. Fry in small batches.
- Using a slotted spoon, take fritters out of the deep fryer one-by-one, and place on a paper towel to remove oil.
- Place warm apple fritters in the cinnamon and toss to coat.
