Ingredients you will need:

  • 3 Zucchini (about 1/2 pound each) slice lengthwise to ¼-inch slices
  • 1 tbsp olive oil
  • 1 pinch black pepper fresh ground
  • ⅛ tsp salt
  • 1 tbsp fresh parsley minced
  • 1½ oz soft goat’s cheese – reduced-fat
  • ½ tsp lemon juice
  • ⅓ cup basil leaves
  • 2 cups baby spinach leaves

How to make:

  • Preheat grill
  • Removing the outermost zucchini slices. Discard
  • Brush both sides of each zucchini slice.
  • Season the zucchini slices with salt and pepper.
  • Grill zucchini on preheated grill approx 4 minutes per side, or until tender
  • In a small mixing bowl, add parsley, goat cheese, and lemon juice. Using a fork, mash to combine.
  • Spoon approx ½ tsp of goat cheese mixture onto zucchini slice, approx ½ inch from the end. Add spinach leaves, and a basil leaf. Roll up zucchini slice. Place with the seam side down on a serving platter. Repeat until all of the zucchini slices are filled, and rolled.
