Weight Watchers Grilled Zucchini Rolls

Equipment
Ingredients
- 3 Zucchini (about 1/2 pound each) slice lengthwise to ¼-inch slices
- 1 tbsp olive oil
- 1 pinch black pepper fresh ground
- ⅛ tsp salt
- 1 tbsp fresh parsley minced
- 1½ oz soft goat's cheese – reduced-fat
- ½ tsp lemon juice
- ⅓ cup basil leaves
- 2 cups baby spinach leaves
Instructions
- Preheat grill
- Removing the outermost zucchini slices. Discard
- Brush both sides of each zucchini slice.
- Season the zucchini slices with salt and pepper.
- Grill zucchini on preheated grill approx 4 minutes per side, or until tender
- In a small mixing bowl, add parsley, goat cheese, and lemon juice. Using a fork, mash to combine.
- Spoon approx ½ tsp of goat cheese mixture onto zucchini slice, approx ½ inch from the end. Add spinach leaves, and a basil leaf. Roll up zucchini slice. Place with the seam side down on a serving platter. Repeat until all of the zucchini slices are filled, and rolled.
