Weight Watchers Avocado Tzatziki
Equipment
Ingredients
- ½ cup seeded cucumber chopped
- 2 cloves garlic minced
- 1 large avocado peeled and pitted
- 1 lemon juiced
- ¼ cup sour cream (optional)
- 1 tbsp fresh cilantro chopped
- 1 tbsp fresh mint chopped
- ½ tsp red pepper flakes (or to taste)
- salt and black pepper to taste
Instructions
- Using a medium sized bowl, add cucumber, garlic, avocado, sour cream, and lemon juice.
- Mash the contents with a fork until it is smooth.
- If you are using an avocado that isn't fully ripe, use a food processor to mix.
- Season the mix with cilantro, mint, red pepper flakes, salt, and pepper. Mix
- Cover bowl and place in the refrigerator for at least 1 hour to chill before serving.
