Tips and Tricks
Handling Jalapenos
Wear gloves while handling jalapenos to avoid irritation from the capsaicin. If you accidentally touch your face or eyes, wash the area thoroughly with soap and water to reduce the burning sensation.
Creamy Filling
For an extra creamy filling, ensure your cream cheese is at room temperature before mixing it with the cheddar cheese and mayonnaise. This will make it easier to blend and spread into the jalapenos.
Crispier Coating
For an extra crispy coating, toast the panko breadcrumbs in a dry skillet over medium heat until they are golden brown before using them to coat the jalapenos. This adds a crunchier texture to the final dish.
Even Cooking
Arrange the stuffed jalapenos evenly on the baking sheet without overcrowding them. This ensures they bake evenly and the filling gets bubbly and delicious.
Storage
If you have leftovers, store them in an airtight container in the refrigerator. To reheat, place them in a preheated oven at 350 degrees F for about 10-15 minutes until warmed through and crispy. Avoid microwaving as it can make the coating soggy.

Weight Watchers Baked Jalapeno Poppers
Equipment
Ingredients
- Pam cooking spray – Olive oil flavored
- 1 tablespoon mayonnaise – fat-free
- ½ cup shredded cheddar cheese – low-fat
- 2 ounces cream cheese – light
- 8 jalapeno peppers
- ¾ cup panko breadcrumbs
- ¼ cup egg substitute – fat-free
Instructions
- Preheat the oven to 350 degrees F.
- In medium mixing bowl, mix well cheddar cheese, mayonnaise, and cream cheese; set aside.
- Put on gloves, cut jalapenos in half lengthwise, remove seeds.
- Using cream cheese mixture, stuff jalapenos.
- Put Panko bread crumbs in a shallow dish. Put egg substitute in another shallow dish.
- Dip jalapeno in egg substitute, then coat in bread crumbs by rolling.
- Coat baking sheet with Pam. Place jalapenos on baking sheet.
- Bake approx 30 minutes or until filling is bubbling. Serve hot.
