Weight Watchers Beef and Barley Soup
Ingredients
- 2 lbs beef chuck or round steak diced
- 1 large onion chopped
- 2 cups carrots chopped
- ½ cup frozen corn
- 1 stalk celery diced
- ½ cup frozen green beans
- ½ green bell pepper diced
- 1 can (16oz) tomatoes cut up
- 1 tbsp dried parsley flakes
- ¾ tsp dried basil
- 2 tsp salt
- ⅔ cup barley
- 2 cubes beef bouillon
- 5 cups water
Instructions
- In a skillet, add diced beef, and brown.
- In a slow cooker, add onion, carrot, corn, celery, green beans, and green pepper.
- In a mixing bowl, add tomatoes, parsley flakes, basil, salt, barley, and beef bouillon. Combine
- Pour mixture over contents of slow cooker. Don't stir in.
- In the slow cooker, add the water.
- Cover the slow cooker and on LOW setting, cook for 8 to 10 hours.
