Tips and Tricks

Enhancing Flavor

For added depth of flavor, sauté a diced onion and a few cloves of minced garlic in a little olive oil before adding the tomatoes, chilies, and broth to the pot. This will give the soup a more robust base.

Smooth Consistency

If you prefer a smoother texture, use an immersion blender to blend the soup after the broccoli is tender and before adding the Velveeta cheese. This will create a creamy, uniform consistency.

Extra Veggies

For additional nutrition and flavor, consider adding other vegetables such as diced carrots or celery when you add the frozen broccoli. This adds more variety and texture to the soup.

Spicy Kick

If you like your soup with a bit more heat, add a pinch of cayenne pepper or a few dashes of hot sauce along with the Velveeta cheese. This will give the soup a nice spicy kick.

Serving Suggestions

Serve the soup with a side of crusty bread or garlic toast for a complete meal. Garnish with a sprinkle of fresh chopped parsley or cilantro for a pop of color and freshness.

Storage and Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over medium heat, stirring occasionally. If the soup thickens too much upon reheating, add a splash of chicken broth or milk to adjust the consistency.

Freezing Tips

This soup can be frozen for up to 3 months. Allow the soup to cool completely before transferring it to a freezer-safe container. Thaw in the refrigerator overnight and reheat on the stovetop. Note that the texture may change slightly due to the cheese, but it will still be delicious.
