Weight Watchers Broccoli Cheese Soup Recipe
This is an easy appetizer or meal. It only has four ingredients, and you only need one pot!
I like to make this recipe, and freeze it in portion sizes so I have an easy dinner option when I don’t feel like cooking. It’s also an easy lunch option.

Weight Watchers Broccoli Cheese Soup
Equipment
Ingredients
- 1 can tomatoes and green chilies 10 ½ oz
- 3 cans chicken broth 14 ½ ounce each can
- 2 lbs broccoli frozen
- 10 oz Velveeta cheese reduced fat
Instructions
- Place tomatoes and chilies, chicken broth, and frozen broccoli in a soup pot.
- Bring to a boil stirring occasionally, reduce heat to simmer for until vegetables are tender, approx 25 minutes.
- Cube Velveeta, add to soup.
- Continue simmering until the Velveeta melts.
