Weight Watchers Cheesy Stuffed Chicken Zucchini Recipe not your average stuffed zucchini. This baked dish contains a creamy cheese mixture and chicken that is baked in the oven until golden brown with melted cheese on top.

Weight Watchers Cheesy Stuffed Chicken Zucchini

How to make

  1. Preheat oven to 375° F.
  2. Prepare a 9×13 casserole dish by spraying with nonstick cooking spray.
  3. In the casserole dish, add ½ cup of tomato sauce, and spread to cover the bottom.
  4. Cut the ends off of the zucchini, and slice in half lengthwise.
  5. Using a melon baller, scoop out the flesh out of the middle of the zucchini.
  6. Cube the zucchini flesh and set.
  7. In the baking dish, place zucchini in a single layer, cut side up
  8. Place a large saute pan over medium heat.
  9. In saute pan, add olive oil, and heat.
  10. Add cubed zucchini, stir and cook approx 3 minutes.
  11. Add the remaining 1½ cup tomato sauce, and the chicken. Stir and cook approx 1 minute.
  12. Spoon equal amounts of the chicken mixture in the zucchini halves.
  13. Cover baking dish with aluminum foil
  14. In preheated oven, bake 30 minutes, remove foil, sprinkle with Mexican style blend cheese, and bake approx 3 to 5 minutes or until cheese has melted.
  15. Take out of the oven and sprinkle with chopped basil.
  16. Serve.
