Weight Watchers Stir-Fry Chicken Fajitas Recipe.

A tasty Mexican Dinner recipe made with boneless, skinless chicken breast, onion, green, yellow, and red bell peppers, garlic, cayenne pepper, cumin, and lime juice.

The marinated chicken is the perfect mix of flavors!

The twist with this meal is that it’s made in a wok.

Weight Watchers Stir-Fry Chicken Fajitas

Ingredients you will need:

How to make:

  1. In a glass bowl, combine lime juice, vegetable oil, cayenne pepper, and cumin. Mix well.
  2. Add chicken and stir to coat well.
  3. Cover with plastic wrap and place in refrigerator for 1 to 2 hours to marinate.
  4. In a wok, add 1 TBSP of water and heat over high heat until very hot.
  5. In the wok. place the chicken and the marinade.
  6. Stir-fry chicken approx 3 – 5 minutes or until chicken is cooked, and no pink is left. Transfer chicken to a plate.
  7. In the wok, add 2 TBSP water.
  8. When hot, add onion, bell peppers, and garlic.
  9. Stir-fry approx 3 – 5 minutes or until vegetables are crisp/tender.
  10. Add chicken back in the wok.
  11. Add pepper
  12. Stir-fry appox 1 minute or until heated through.
  13. To serve, place equal amounts of chicken and vegetable mix on 10 fajita tortillas.
