  • In a glass bowl, combine lime juice, vegetable oil, cayenne pepper, and cumin. Mix well.
  • Add chicken and stir to coat well.
  • Cover with plastic wrap and place in refrigerator for 1 to 2 hours to marinate.
  • In a wok, add 1 TBSP of water and heat over high heat until very hot.
  • In the wok. place the chicken and the marinade.
  • Stir-fry chicken approx 3 – 5 minutes or until chicken is cooked, and no pink is left. Transfer chicken to a plate.
  • In the wok, add 2 TBSP water.
  • When hot, add onion, bell peppers, and garlic.
  • Stir-fry approx 3 – 5 minutes or until vegetables are crisp/tender.
  • Add chicken back in the wok.
  • Add pepper
  • Stir-fry appox 1 minute or until heated through.
  • To serve, place equal amounts of chicken and vegetable mix on 10 fajita tortillas.
